Acidity and peroxide levels
There are many factors that help determine if olive oil qualifies for the coveted EXTRA in Virgin Olive oil. The Very Best.
One of these is that the free acidity level must be lower than 0.8. The lower the better as that's a good indication of freshness....BUT....refining also lowers the free acidity level (while destroying the health benefits)... so we added the Peroxide level (which must be below 20% to qualify as Extra Virgin olive oil) to confirm the acidity level. Again the lower the better. Together you can be sure of the quality, freshness and authenticity of these incredible Extra Virgin Olive oils.
